This is one of our favorite recipes. My husband lights up whenever he hears we’re having it for dinner. Enjoy!

Parmesan Chicken

1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
2 eggs
3 tablespoons milk
2/3 cup grated Parmesan Cheese
1/3 cup dry bread crumbs
1 broiler/fryer chicken (3-4 pounds), cut up
(I just use a few boneless, skinless chicken breasts)
In a shallow bowl, combine flour, salt, paprika, and pepper. In another shallow bowl, beat eggs and milk. In a third bowl, combine Parmesan cheese and bread crumbs (you can also add some Italian seasoning for a nice touch). Coat chicken with flour mixture, dip in egg mixture, then roll in crumb mixture.
Place in a well-greased 15-in. x 10-in. x 1-in. baking pan. Bake at 400° for 50-55 minutes or until chicken juices run clear. Yield 4 servings.
